Coconut Pineapple Popsicles⁣

Here are some delicious refreshing popsicles for hot summer days. I did not have any popsicle molds so I improvised with some small mason jars and popsicle sticks. This worked great! To unmold, just place the jar in a bowl of hot water.⁣


Ingredients⁣

1 13.5 oz can coconut cream⁣

One half of a 13.5 oz can pineapple chunks in juice⁣

A few mint leaves⁣

A heaping teaspoon of honey⁣

Empty can of coconut cream into a small saucepan. Add mint leaves and honey to pan, and bring to a boil. Simmer for 5 minutes, stirring frequently.⁣

In the meantime, empty half the can of pineapple, with juice, into a blender. Blend until mostly smooth.⁣

Remove coconut cream from heat, and strain out mint leaves. Add blended pineapple and mix well. Pour mixture into popsicle molds. Wait until it cools, then place in freezer.⁣

Freeze until hard, about 4 hours. Unmold and enjoy! This recipe makes about 7 small popsicles.⁣
