Here is a delicious and filling salad that gives you a healthy portion of shellfish and fermented dairy, both highly nutritious foods.
Ingredients
2 hearts romaine lettuce, chopped finely
1 lb raw shrimp, peeled
1 red bell pepper, chopped into small pieces
1/2 cup cooked corn (I use frozen corn and steam it until tender)
1/4 cup white onion or scallion, finely chopped
1 avocado, peeled and chopped into small pieces
Dressing:
3/4 cup yogurt or kefir
3/4 cup sour cream
2 tbsp rice vinegar
2 tbsp or more chopped basil
1 clove raw garlic, minced (optional, but super delicious)
Cook shrimp using your favorite method. I coat in olive oil with salt and pepper, then lay on a baking sheet and put in the oven at 350°F until pink, about 6 minutes.
Mix all salad ingredients together.
Whisk dressing ingredients together. Toss salad with dressing. Taste, and add salt if necessary. Serve and enjoy!
