This is a variation of a very popular Russian dish. I grew up in Russia and ate this delicious dish frequently during the summers when fresh mushrooms were plentiful in the forest. It makes a hearty and filling side dish, and is loved by kids and adults alike.
Ingredients
6 cups sliced mushrooms
1 large yellow onion, finely diced
3/4 cup grated cheese
3/4 cup sour cream
Salt and pepper to taste
Ghee or lard for sauteing
Preheat oven to 350°F.
Heat 2 tbsp ghee or lard on a large pan over medium heat. Add mushrooms and onions and saute, stirring occasionally, until mushrooms are wilted and all liquid has cooked off, about 15-20 minutes.
Add sour cream and mix to coat mushrooms and onions well. Add just enough so that all mushrooms are coated, about 3/4 cup. Add salt and pepper to taste, making sure to use a generous amount of pepper. Cook for another 2 minutes.
Transfer the mixture into a round casserole dish. Top with grated cheese. Place in oven and bake for 15 minutes.
Serve immediately and enjoy!
