Beet and Walnut Salad
Here is a traditional Eastern European salad that is easy, filling, nutritious, and delicious.
Did you know that in addition to being high in vitamins, beets can naturally lower blood pressure? Whip up this easy salad as a light meal or a yummy side dish.
4 cups cooked grated beets
1/2 cup chopped toasted walnuts
1-2 garlic cloves, crushed
My favorite way to cook beets is to boil them until a knife pierces them easily. The time this takes depends on the size of the beet. You can also roast, pressure cook, or steam the beets to cook them. They are ready whenever a knife pierces the beet easily. Make sure to peel the beets prior to grating.
Mix beets, walnuts, and garlic together. Add enough mayonnaise to coat well. Serve and enjoy! This dish keeps very well in the fridge.
