Cobb Salad
Cobb salad is a really fun dish to make at home. You can get creative and throw in unusual ingredients, and it makes a salad that is hearty enough to be a whole meal. And unlike restaurant Cobb salad, you know exactly what goes into it! Here is my recipe, feel free to throw in whatever other ingredients suit your fancy.

Ingredients
1 head red leaf lettuce (or romaine), chopped
2 hard-boiled eggs, chopped
1/2 cup chopped tomato
1/2 cup sliced and chopped cucumber
3 strips bacon, cooked until crispy and chopped (I cook in oven at 400°F until crispy, about 20 minutes)
1/4 cup blue cheese or feta, crumbled or chopped finely
1 avocado, chopped
1/2 cup corn kernels, steamed
1/4 cup red or white onion, chopped finely (optional)
1/2 cup or more cooked meat of choice (I have used shrimp, sautéed chicken thigh, and Canadian bacon warmed on a pan, all delicious!) (optional)
Dressing Ingredients
1/2 cup olive oil
2 tbsp red wine vinegar
1/2 tbsp Dijon mustard
1/2 tbsp dried oregano
1/2 tsp salt
1/4 tsp pepper
2 cloves garlic, minced (optional)
Put all dressing ingredients in jar, close tightly, and shake until well mixed.
Put together all salad ingredients, add dressing, toss and mix well, and enjoy!
