Who knew gummies could be healthy? These gummies are lightly sweetened and contain healthy fats and a generous serving of gelatin, which is wonderful for digestive, skin, and joint health. I usually get gelatin from bone broth, but isn’t it fun to eat something so healthy in a dessert? It’s also easy to get kids involved in preparing these fun treats.
Equipment
Silicon gummy molds
Cookie sheet
Ingredients
1 13.5 Oz can coconut milk
1 3/4 cups water
1/4 cup maple syrup
3/4 cup grass-fed beef gelatin (I buy the Great Lakes brand)
Natural food coloring (optional)
Add all ingredients to a saucepan and heat on medium heat, stirring frequently to help dissolve the gelatin. When mixture starts to boil, turn down to a simmer and continue stirring until gelatin is dissolved.
If desired, add food coloring.
Place molds on a cookie sheet. Pour mixture into molds. Place sheet in freezer until set. For my monster molds, this takes 20 minutes. If you are using smaller molds, like for gummy bears, it will take less time.
Unmold and enjoy! Store in an airtight container in the fridge.
