This filling and tasty dish is easy to whip up for breakfast, lunch, or a light supper. You can substitute any other veggies for green beans, such as asparagus, broccoli, or bell peppers. Ham would be a tasty addition as well.
Make sure to use pastured eggs, which are much higher in fat soluble vitamins than eggs from hens fed exclusively grains. Pastured eggs have bright yellow or orange yolks.
Ingredients
6 eggs
2 cups green beans, trimmed and chopped into bite size pieces
1 1/2 cups shredded sharp cheddar
Black pepper
1 tbsp grated Parmesan cheese
Preheat oven to 375 degrees. Steam green beans until tender. Crack eggs into a bowl and beat well. Add green beans, cheddar, and a few dashes of black pepper. Mix well. Pour into greased pie dish. Sprinkle parmesan on top. Bake in oven until a toothpick inserted into the center comes out clean, 30-40 minutes. Slice, serve, and enjoy!
