Crustless Green Bean Quiche⁣

This filling and tasty dish is easy to whip up for breakfast, lunch, or a light supper. You can substitute any other veggies for green beans, such as asparagus, broccoli, or bell peppers. Ham would be a tasty addition as well.⁣

Make sure to use pastured eggs, which are much higher in fat soluble vitamins than eggs from hens fed exclusively grains. Pastured eggs have bright yellow or orange yolks.⁣



Ingredients⁣

6 eggs⁣

2 cups green beans, trimmed and chopped into bite size pieces⁣

1 1/2 cups shredded sharp cheddar⁣

Black pepper⁣

1 tbsp grated Parmesan cheese⁣

Preheat oven to 375 degrees. Steam green beans until tender. Crack eggs into a bowl and beat well. Add green beans, cheddar, and a few dashes of black pepper. Mix well. Pour into greased pie dish. Sprinkle parmesan on top. Bake in oven until a toothpick inserted into the center comes out clean, 30-40 minutes. Slice, serve, and enjoy!
