Pan-Fried Potatoes and Bacon

Salty, fatty, starchy, and a bit crispy, this dish is pure comfort food, and is easy to make any time with just 2 ingredients you probably already have at home.



Ingredients

Bacon, chopped into 1/2 inch pieces

Baby Yukon gold potatoes, sliced thinly, or regular Yukon gold potatoes, cut into matchsticks

Salt


The ratio of bacon to potatoes is entirely up to your preference, but it should be at least 1:5 by volume, so that you have enough bacon fat to fry the potatoes.


Start by setting a frying pan on medium heat and adding the bacon. Cook the bacon, stirring frequently, until the fat starts to render and the bacon starts getting crispy, about 10-15 minutes.


Add the potatoes and mix well. There should be a fair amount of bacon grease in the pan at this point. Cover the pan, and continue to cook on medium heat, stirring every minute or two and covering the pan again, until potatoes are soft and starting to brown, about 15-20 minutes. Add salt to taste.

Serve and enjoy!
