This pate is so silky-smooth and incredibly delicious, it’s hard to believe how easy it is to make.
The liver flavor is very mild, so this is a great recipe for anyone struggling to add liver to their diet. The combination of liver and butter (preferably grass-fed!) makes this a highly concentrated source of nutrition.
Ingredients
1 lb chicken livers, rinsed
1/2 tsp salt
1 cup water
1 bay leaf
2 garlic cloves + 1 shallot OR 4 garlic cloves, sliced
Pinch of nutmeg
6 tbsp butter
Combine liver, salt, water, bay leaf, garlic, and shallot in a small saucepan. Bring to a boil, then turn down heat and simmer uncovered for 5 minutes, stirring occasionally.
Drain and remove bay leaf. Add to food processor along with nutmeg. Turn on food processor. With food processor running, add butter gradually. Continue processing until mixture is silky-smooth.
Transfer to a container and chill in refrigerator.
Serve cold with bread, crackers, veggies, or just on a spoon. Enjoy!
