This is a lovely refreshing salad that you can make very quickly and easily. I love using cabbage in salads because unlike lettuce, cabbage keeps for a very long time, so you can buy ahead, and you do not have to wash it in a salad spinner, saving you a step. Leftover cabbage salad also keeps much better than a salad with lettuce.
Because of the tart apple, this salad pairs particularly well with pork and lamb.
Ingredients
1/4 head green cabbage, shredded
1 Granny Smith apple, peeled and diced
2-3 scallions
1/2 cup feta cheese, diced or crumbled
Salt and pepper
Olive oil
Apple cider vinegar
Mix cabbage, apple, scallions, and feta. Add salt and pepper to taste and dress with oil and apple cider vinegar. Serve immediately. Enjoy!
