Cabbage Apple Salad⁣


This is a lovely refreshing salad that you can make very quickly and easily. I love using cabbage in salads because unlike lettuce, cabbage keeps for a very long time, so you can buy ahead, and you do not have to wash it in a salad spinner, saving you a step.⁣ Leftover cabbage salad also keeps much better than a salad with lettuce.

Because of the tart apple, this salad pairs particularly well with pork and lamb.⁣

Ingredients⁣

1/4 head green cabbage, shredded ⁣

1 Granny Smith apple, peeled and diced⁣

2-3 scallions⁣

1/2 cup feta cheese, diced or crumbled⁣

Salt and pepper⁣

Olive oil⁣

Apple cider vinegar⁣

Mix cabbage, apple, scallions, and feta. Add salt and pepper to taste and dress with oil and apple cider vinegar. Serve immediately. Enjoy!⁣
